Easy Slow Cooker Chili Lime Mexican Ground Beef

Making Chili Lime Mexican Shredded Beef with the simple slow cooker only takes a few minutes before the slow cooker does all the work! This super simple meal is ridiculously tasty and so versatile. Just serve it or enjoy it in tacos, burritos, enchiladas, quesadillas and much more!

Simple slow cooker recipes are always a favorite. You can toss it in the pot in the morning and then spend the next 8 hours deciding what to have for dinner. Leftovers? You are probably already prepared for a completely different dinner tomorrow night. This shredded beef is great on tacos, burritos, quesadillas, enchiladas … well, you get it. It’s great on absolutely everything. We love how this recipe uses whole, real ingredients. Well, when you call soda a whole, real ingredient, you’re walking a thin line. However, we love the way soda tastes and tenderizes beef. It is really amazing what it can do. The sugar and the carbon dioxide break down this tough roast and make a tender, moist and tasty ground beef. It’s simple and totally delicious.

  • Lime juice:

    We always say that fresh is best, and we stand by it. In a recipe like this, however, you could get away with bottled lime juice.

  • Garlic options:

    You can use either chopped garlic, garlic granules, or garlic powder. Sticking to garlic granules or garlic powder keeps prep time super quick and easy. If you are using either granules or powder, you will need half a teaspoon.

  • Sear the roast:

    Searing your roast on the stove is completely optional, however we find it adds a little more flavor to the shredded beef. If you have time to sear it, we highly recommend it!

  • Why is there Soda in Easy Slow Cooker Chili Lime Mexican Shredded Beef?

    The sugar and carbon dioxide in the soda break down the meat to produce the most tender, moistest, and tastiest shredded beef. It is imperative in this recipe. However, you can use any lemon-lime soda you prefer: Sprite, 7-Up, Generic Brand, Sierra Mist, anything! We strongly recommend using a regular sugar soda instead of dieting. However, you can use diet soda in a pinch.

  • Storage and rewarming instructions:

    Store any leftovers in an airtight container in the refrigerator for up to 5 days. Heat in a pan over medium-low heat until warm or in a microwave in 30 second increments for a total of 90 seconds.

ingredients

  • 1 tablespoon olive oil
  • 4th lb Roast beef
  • 4th cups Lemon-lime soft drink
  • 1 1/2 teaspoon Chilli powder
  • 1 teaspoon Salt-
  • 3 Cloves minced garlic
  • 2 Lemons juiced (about 1/4 cup)

  • Heat a large heavy pan over medium-high heat. Add olive oil and sauté the roast until brown on all sides.

  • Place the roast in the bottom of a 5 to 8 liter slow cooker. Pour soda over the roast. Season with chilli powder, salt and garlic.

  • Cover with a lid and cook at low temperature for 8 hours until they can be easily crushed with a fork.

  • Chop up and pour lime juice over it. Serve hot.

Remarks

OVEN INSTRUCTIONS:

  1. Preheat the oven to 350 degrees. Get a large oven safe Dutch oven pot that heats over high heat. Add the oil to the saucepan and fry the roast until it is brown on all sides.
  2. Pour soda over the roast. Season with chilli powder, salt and garlic.
  3. Cover with a lid and place in the preheated 350-degree oven. Cook for 3 hours or until the meat has an internal temperature of 20 ° C and can be easily chopped with a fork. Chop up and pour lime juice over it. Serve hot.
