How to make egg salad with sriracha and avocado
One of the best Easter traditions is hard boiling eggs and coloring the white-shelled eggs pink, blue, green and yellow. But after you’ve colored a few dozen eggs, what do you do with all of them? Sure, you can make delicious devil eggs or toss sliced hard-boiled eggs on top of your salad, but to really move through those eggs there’s only one recipe: egg salad.
Breakfast egg dishes to make beforehand
Egg salad is one of the best recipes to complete an egg carton because it uses three or six whole eggs on a regular basis and is easy to feed a family. And of course you can prepare a classic healthy egg salad with yogurt, dill and chives. OR, you can choose to go one better with this fiery sriracha and avocado egg salad recipe.
At first glance, this egg salad starts off quite simply with mayonnaise, spring onions, and lemon juice. But then things get exciting when Sriracha are used abundantly for a fiery kick and a diced avocado for extra fat and creamy taste.
Making egg salad is remarkably easy, but there are a few things you can do to make it even easier. After you’ve peeled your hard-boiled eggs perfectly, first chop them into pieces in the bowl using a cookie cutter or scraper. This cooking hack saves you dishes and results in even cuts that are quick. We also recommend keeping the yolks with the eggs. Egg yolks add flavor and protein, and of course they’re silly tasty too.
It could also go without saying, but customize the flavors of this egg salad to your liking. If you don’t feel particularly spicy, lower the sriracha level or swap it out for a spicy sauce with a little less heat. Add extra salt and pepper if you’d like, skipping the green onions and swapping them for dill, parsley, or whatever you have on hand. Make sure you taste it while you make this egg salad. This can just be one of those recipes that will change every time you make it.
Once you’ve made your sriracha-flavored egg salad, toss it on toasted bread with lettuce, tomato, and sliced red onion. Serve with a few french fries and enjoy. This is hands down one of those sandwiches better than what your mom used to make.
- 6 hard-boiled eggs
- 1/4 cup mayonnaise
- 2-3 tablespoons of Sriracha
- 1/4 cup green onions, thinly sliced
- 1 avocado, diced
- 1 tablespoon of lemon juice
- Salt and pepper to taste
- 2 slices of white bread
- Optional sandwich toppings: tomato slices, lettuce, red onions
Step 1: Roughly chop 6 hard-boiled eggs and place in a large bowl.
Step 2: Add 1/4 cup of mayonnaise, 2-3 tablespoons of sriracha, 1/4 cup of sliced green onion, 1 diced avocado, and 1 tablespoon of lemon juice. Mix well and then season with salt and pepper. Try the mixture and add more sriracha if it needs seasoning, or more mayo if it’s too hot for your taste.
Step 3: Build the sandwich by putting lettuce, tomatoes, and a couple of spoons of egg salad on top. Enjoy!
