How to make egg salad with sriracha and avocado

One of the best Easter traditions is hard boiling eggs and coloring the white-shelled eggs pink, blue, green and yellow. But after you’ve colored a few dozen eggs, what do you do with all of them? Sure, you can make delicious devil eggs or toss sliced ​​hard-boiled eggs on top of your salad, but to really move through those eggs there’s only one recipe: egg salad.

Egg salad is one of the best recipes to complete an egg carton because it uses three or six whole eggs on a regular basis and is easy to feed a family. And of course you can prepare a classic healthy egg salad with yogurt, dill and chives. OR, you can choose to go one better with this fiery sriracha and avocado egg salad recipe.

At first glance, this egg salad starts off quite simply with mayonnaise, spring onions, and lemon juice. But then things get exciting when Sriracha are used abundantly for a fiery kick and a diced avocado for extra fat and creamy taste.

  • 6 hard-boiled eggs
  • 1/4 cup mayonnaise
  • 2-3 tablespoons of Sriracha
  • 1/4 cup green onions, thinly sliced
  • 1 avocado, diced

Step 1: Roughly chop 6 hard-boiled eggs and place in a large bowl.

Step 2: Add 1/4 cup of mayonnaise, 2-3 tablespoons of sriracha, 1/4 cup of sliced ​​green onion, 1 diced avocado, and 1 tablespoon of lemon juice. Mix well and then season with salt and pepper.
